Something new

I know, I know, I haven't written for ages. Life just takes over sometimes. But I am feeling inspired again to try all things new in the kitchen and it would be remiss of me not to share!

It was recently Halloween and after hankering for all things chocolate and peanut butter, I screamed to my family across the pond via my Facebook status, "Raid Target! Send me Hershey's!!" I grew up not far from Hershey, Pennsylvania actually, so it means more to me than just a candy bar (and if I ever get back to that sacred place of chocolate, I promise to kiss the ground).

Fabulous my family. They actually took note. My dear brother and his gorgeous Southern peach of a partner, ran right off in the direction of the nearest store and packed and sent a box stuffed not only with Hershey's chocolate, but jars of Skippy peanut butter!

So never forgetting the great taste of dipping your chocolate in my peanut butter, and dipping your peanut butter in my chocolate, I offer this gorgeous confection.


Chocolate Peanut Butter Balls
( I got it to make 55 balls!)

2 cups peanut butter (chunky or smooth)

1/2 cup butter or marg, softened

3 cups icing sugar

1 tsp vanilla

3 cups crispy rice cereal



Mix peanut butter, butter or marg, vanilla and icing sugar, add cereal mixing well until well combined.



Form dough into one inch balls and place them on a biscuit tray covered with greaseproof paper. Chill for 20 minutes in the fridge or put them in the freezer for 10 minutes.



In a double boiler or microwave melt 1/4 bar of pure paraffin (if you don't have it you can use ) with 3 cups of chocolate chips.
You could use a couple of tablespoons of veg oil instead if you don't want to use the paraffin. The results will be similar but the chocolate may be softer and more "melty" in your hands when you eat them.



Using fork or slotted spoon, dip the peanut butter balls into the chocolate and place on greaseproof paper. Chill until set.
